Italian Beef Stew

Servings: 4-6

Ingredients

1/4 cup olive oil
1/4 cup minced prosciutto, ham, or bacon
1 large onion, minced or crushed
1 clove garlic, minced or crushed
1/4 cup minced flat Italian parsley
1/4 tsp. freshly ground black pepper
2 lbs. boneless stewing beef, trimmed and cubed
1-1/2 cups quartered fresh artichoke hearts, or 1 package frozen
1 cup shelled whole peas (about 1 lb.) or 1 package frozen
1 tsp. salt
1/2 cup water

Steps

Heat oil in a large skillet. Add ham, onion, garlic, and parsley and sauté for 2 minutes, stirring constantly. Add beef and cook over a medium heat for 10 minutes, stirring often. Add remaining ingredients, bring to a boil, cover, and simmer for 30-40 minutes, stirring occasionally, until tender.
